The carbon steel is of unknown origin and more than 100 years old. It isn’t uncommon in Thiers and other grinding-centric European enclaves to find old forgings, things forged for a job en masse and then were never ground into their final production shape, and often not even heat treated/tempered back then, as I would greatly suspect is the case here. The steel itself is from prior to WWI. Thiers-Issard has done the grinding for the blades and assembled it into final form. Handmade in France. This is a vintage carbon steel item of more than one hundred years old parts origin, you can consider this an “instant antique” and you should not place an expectation of perfection from today on something that’s meant to look old, because it truly is. Thiers-Issard also produces an entirely modern version of this same thing. You can certainly return this if you’re not happy with it as it isn’t a Personal Use item (= not designed for direct interaction with human tissue), just place your expectations on the reality of old carbon steel. There should be some element of charming patina no matter what you do.
