A double-baked, authentic rusk, rich in fiber, which immerses you in its delicious secret. Paxamas, with its special shape, is the ideal to accompany the world-famous Mediterranean salad, dako. Dakos recipe: * Put the pieces of barley in a plate with their outer side facing down.* Cut a tomato in half and grate half on the grater in a bowl. Cut the other half in cubes.* Put the grated tomato, olive oil, a little vinegar, a little salt & pepper, some chopped basil, and some chopped thyme in a bowl and mix.* Put the mixture over the barley rusks.* Add the diced tomato, capers, chopped onion, and crumbled feta cheese on top.* You can chill in the refrigerator for a bit before serving, if you wish.
